This recipe needs to chill overnight
3/4 cup butter, softened
1 cup sugar
1 egg
1/4 cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
1-1/2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon salt
In a mixing bowl, cream butter and sugar. Add egg, beat well. Add molasses, mix well. Combine flour, baking soda, cinnamon, ginger and salt; add to creamed mixture and mix well.
Chill overnight.
Shape into 1/2 inch balls; roll in sugar. Place 2 inches apart on ungreased baking sheets. Bake at 375 degrees for 6 minutes or until edges begin to brown. Cool for 2 minutes before removing to a sheet of aluminum foil on the counter.
