So easy to make!
1 lb. ground beef or turkey
1/2 cup chopped onion
1 pkg (1 oz) taco seasoning mix
1 - 15.5 oz. black beans, rinsed/drained
1 cup milk
2 eggs
1/2 cup Original Bisquick mix
1/2 cup shredded cheese
1/2 cup chopped tomato
1 cup shredded lettuce
Heat oven to 400 degrees. Spray 9" glass pie plate with cooking spray. Cook ground beef and onion in skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in seasoning dry mix. Spoon into pie plate.
Stir milk, eggs, cheese (save out a little for topping) and Bisquick mix until blended. Pour into pie plate.
Bake about 25 minutes. Top with cheese and tomato; bake 2-3 minutes longer or until cheese is melted. Let stand 5 minutes before serving. Serve with lettuce and sour cream.
I also add black olives and corn to the meat mixture.
