Get your protein and greens with these mini egg bakes!
1 teaspoon olive oil
2 cups coarsely chopped fresh baby spinach
1/3 cup cubed ham
3 large eggs
3 tablespoons milk
1 tablespoon chopped fresh chives
dash salt
dash pepper
6 tablespoons shredded cheddar cheese
Heat oven to 350 degrees. Thoroughly grease 6 regular-size muffin cups.
Heat oil in 8" nonstick skillet over medium heat. Add spinach and cook and stir until wilted, about 1 minute. Remove from heat and stir in ham.
In a small bowl, whisk together eggs, milk, salt and pepper. Stir in the spinach mixture, cheese and chives. Divide the mixture among the prepared muffin cups.
Bake 18-22 minutes or until the egg bites are puffed and the tops and centers are set. Let cool in cups for 5 minutes; loosen sides and remove from cups. Serve warm.
For easy removal and cleanup, line muffin cups with foil muffin liners; spray liners with nonstick cooking spray.
