Apples and pumpkin -- what a great combination for autumn!
2 eggs
1 cup canned pumpkin
1/2 cup vegetable oil
2 cups finely chopped peeled tart apples
2-1/2 cups flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
Combine eggs, pumpkin and oil in large bowl. In another bowl, combine the flour, sugar, baking soda, salt and spices. Stir dry ingredients into wet ingredients just until moistened.
Fold in apples. Fill greased or paper-lined muffin cups 2/3 full. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Cool for 10 minutes before removing from pan if not using paper liners.
Makes approximately 18 regular size muffins.
I also use this recipe to make (4) small loaves of bread. Also great as mini muffins.
