Carrot Bars

Baking Time 20-25 minutes |
Oven Temperature 350° F |
Pan Size 9" X 13" Greased |
Bars:
1 cup sugar
3/4 cup Crisco oil
1 teaspoon vanilla
2 eggs, beaten
1-1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 small jar of carrot baby food
1/2 cup chopped pecans
Frosting:
1/2 cup butter
1 - 3 oz. package cream cheese
1 teaspoon vanilla
1-1/2 cups powdered sugar
Bars: Cream sugar and oil. Add vanilla and eggs and beat well. Add flour, baking soda, salt, cinnamon to the creamed mixture. Fold in jar of carrot baby food and nuts. Bake in greased pan for 20-25 minutes until tested done.
Frosting: Melt butter. Using a hand mixer, beat in softened cream cheese. Add vanilla and powdered sugar. Beat thoroughly.
Cool bars before frosting.
