Meringue Bars

1 cup Crisco shortening
1/2 cup white sugar
1/2 cup packed brown sugar
3 eggs, separated
1 tablespoon water
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt

1 - 6 oz semisweet chocolate chips

1 cup packed brown sugar

1/2 cup chopped peanuts (optional)
Mix shortening, sugar, 1/2 cup brown sugar, the egg yolks, water and vanilla in large bowl. Stir in flour, baking soda and salt. Spread dough in pan. Sprinkle with chocolate chips.

Beat egg whites until foamy. Beat in 1 cup brown sugar, 1 tablespoon at a time, until stiff and glossy--do not underbeat. Spread over chocolate chips. Sprinkle with peanuts (optional). Bake until light brown; cool before cutting into bars.
