Oatmeal Craisin Cookies

1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter, softened
1 egg
2 teaspoons molasses
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup quick-cooking oats
3/4 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup each craisins
1/4 cup chopped pecans
1/2 cup vanilla chips
In a large bowl, cream sugars and butter until light and fluffy. Add the eggs, molasses and vanilla; beat well. Combine the flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture.

Stir in the craisins, pecans and vanilla chips. Using large cookie scoop, drop onto greased baking sheets two inches apart. Flatten dough by patting down.

Bake at 350 degrees for 10-11 minutes or until lightly browned. Cool 2 minutes before removing to sheet on tin foil on counter top. Makes about 3 dozen.
You can substitute regular raisins and chocolate chips to make another variation.
Soak the craisins (or raisins) in a bowl of warm water while preparing the dough. Drain water and squeeze craisins/raisins of excess water. This makes them plump up before adding them to the cookie dough.
