2 cups all-purpose flour
1-1/2 cups sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1 - 16 ounce can pumpkin
1 cup Crisco cooking oil
4 beaten eggs
1 cup chopped walnuts (optional)
Frosting:
1/2 cup butter
1 - 3 oz. package cream cheese
1 teaspoon vanilla
1-1/2 cups powdered sugar
In a mixing bowl stir together flour, sugar, baking powder, cinnamon, baking soda and salt. Stir in pumpkin, cooking oil and eggs until thoroughly combined. Then, if desired, stir in walnuts.
Spread batter into an ungreased baking pan. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted near center comes out clean. Cool in pan on a wire rack. Frost with Cream Cheese Frosting. Store frosted bars, covered, in the refrigerator.
Frosting:
Soften butter and cream cheese. Beat together using a hand mixer. Add vanilla and powdered sugar. Beat thoroughly.
