Cookie dough:
1/2 cup butter, softened
1 cup sugar
1 egg
1-1/2 teaspoon vanilla
1-1/2 cups flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 - 10 ounce jar of maraschino cherries
Frosting:
1 - 6 ounce package semisweet chocolate chips
1/2 cup sweetened condensed milk
3-4 teaspoons cherry juice
In mixer bowl, cream together the butter, sugar, egg and vanilla until fluffy. Gradually add the remaining ingredients. Shape dough into one inch balls; place on ungreased cookie sheet. Press down center of dough with thumb.
Drain the jar of cherries reserving the juice. Place a cherry in the center of each cookie.
In a small saucepan, combine the chocolate chips and condensed milk. Heat until chocolate is melted. Stir in 3-4 teaspoons of cherry juice. Spoon approximately one teaspoon of frosting over each cherry spreading to cover the cherry. Bake approximately 10 minutes. Remove to wire rack to cool.
Begin with 2 teaspoons of cherry juice to test that it will not be too runny.
