Quick and easy meal to pull together!
8-12 oz. penne pasta
3 tablespoons butter
3 garlic cloves
12 oz. bag pre-cooked frozen shrimp/thawed; cut into chunks
1 - 14.5 oz. can diced tomatoes, drained
1/2 cup vodka
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 cup heavy whipping cream
1/2 cup shredded Parmesan cheese
Cook pasta according to package directions.
Meanwhile, in a large skillet, heat butter over medium-high heat. Add garlic; cook and stir one minute. Add shrimp and cook.
Stir in tomatoes, vodka, salt and pepper flakes; bring to a boil. Reduce heat; simmer, uncovered for 5 minutes.
Stir in cream; cook 2-3 minutes longer, stirring occasionally.
Drain pasta. Add pasta and Parmesan cheese to sauce; toss to combine. Serve.
Not creamy enough? Add more heavy cream to the dish and heat thoroughly.
