A yummy recipe from Connie with our Homemakers group in Cassville, 1989.
Crust: 2-1/2 cups thawed hash browns
Filling:
5 eggs, beaten
1/3 cup milk
1/2 cup cottage cheese
1-1/2 cup shredded cheddar cheese
2 tablespoons chopped onion
1/2 cup chopped fresh mushrooms
1 teaspoon salt
1/2 teaspoon pepper
Topping: 6-8 slices bacon
Press hash brown potatoes in a greased 10" pie pan.
Combine filling ingredients and pour into crust. Sprinkle with bacon.
Bake @ 325 degrees for 45-50 minutes or until center is firm. Let stand 5 minutes before cutting.
Possible additions could be asparagus or broccoli.
