A nice change from mashed potatoes!
1 large head cauliflower (about 2+ pounds), broken into florets
1 cup shredded Parmesan cheese, divided
1/3 cup heavy whipping cream
1 tablespoon butter
1/2 teaspoon pepper
1 teaspoon chopped fresh parsley
Place 1 inch of water and cauliflower in a large saucepan; bring to a boil. Cook, covered, until soft--about 10-12 minutes. Drain and mash.
Stir in 1/2 cup cheese, cream, butter and pepper. Sprinkle with remaining cheese and garnish with parsley.
