A rich, fudge cookie with mini M&M's--YUMMY!!
2 cups sugar
1/2 cup (1 stick) butter
4 - 1 ounce squares unsweetened baking chocolate, chopped

4 large eggs, lightly beaten
2 teaspoons vanilla

2 cups all-purpose flour
2 teaspoons baking powder

1 - 10.8 ounce bag Mini M&M's
Additional granulated sugar
Preheat oven to 350 degrees.

In 2-quart saucepan over medium heat, combine 2 cups sugar, butter and chopped chocolate, stirring until butter and chocolate are melted; remove from heat.

Gradually stir in lightly beaten eggs and vanilla.

Combine flour and baking powder; stir in flour mixture until well blended. Stir in Mini M&M's. Chill mixture 2 hours for easier handling.

Line cookie sheets with parchment paper. Roll dough into 1-inch balls; roll balls in additional granulated sugar. Place about 2 inches apart onto prepared cookie sheets. Bake 10-12 minutes. Tops will begin to crack--do not over bake. Cool completely. Store in tightly covered container.

Makes approximately 5 dozen cookies.
