Toffee bits add a caramel flavor to this apple cake!
2 cups sugar
4 eggs
1 cup Crisco vegetable oil
1 teaspoon vanilla
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3-4 small McIntosh apples, peeled and chopped
1 cup toffee bits
Peel and chop the apples into small chunks to create approximately 3 cups; set aside.
In large bowl, beat sugar, eggs, vanilla and oil until smooth.
In another bowl, mix together flour, salt and baking soda. Slowly mix flour mixture into egg mixture until well combined.
Fold in the chopped apples and toffee bits. Spread batter into a greased 9" x 13" pan. Bake at 325 degrees for 50-55 minutes until toothpick inserted into center of cake comes out clean.
Allow cake to cool. Serve with vanilla ice cream or whipped topping.
