3-5 minutes/each side
A nice change from potato pancakes.
1 cup grated zucchini (one medium size)
1 egg, beaten
3 tablespoons chopped onion
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese
3 tablespoons chopped black olives
Pinch of salt to taste
2 tablespoons olive oil
In a medium bowl, combine the grated zucchini, egg, onion, flour, Parmesan cheese, mozzarella cheese, black olives and salt. Stir well to distribute evenly.
Heat a small amount of olive oil in a skillet over medium-high heat. Drop the zucchini mixture by heaping tablespoonfuls and cook for 3-5 minutes on each side until golden.
Serve hot with a dollop of sour cream.
Depending on the size of the patty, this recipe makes approximately six patties. The recipe can easily be doubled.
After grating the zucchini, squeeze out some of the excessive moisture to hold the patties together while cooking.
