9-inch pie plate
1 # hamburger
1/4 cup chopped onion
1 - 15 oz. can black beans, rinsed
1 - 14.5 oz. can garlic & onion diced tomatoes, drained
1 cup brown rice
1 - tub (10 oz.) Philadelphia Santa Fe Blend Cooking Creme
3 - flour tortillas (six inch size)
1/4 cup sliced black olives
3/4 cup Mexican style shredded four cheese
Preheat oven to 375 degrees.
Brown hamburger and onions in skillet on top of stove until hamburger is no longer pink; drain. Cook brown rice in water according to directions on box. Combine hamburger, onions, cooked rice, black beans, tomatoes and Santa Fe cooking creme in a large bowl.
Place one flour tortilla in bottom of pie plate. Top with 1/3 of the above mixture; sprinkle with cheese. Place the second tortilla on top adding 1/3 of the mixture; sprinkle with cheese. Cover with the last tortilla and the remaining 1/3 of the mixture.
Cover dish with aluminum foil and bake for 20-25 or until heated through. Uncover, sprinkle the remaining shredded cheese and black olives on top. Continue baking 5 minutes or until the cheese is melted.
Serving size: 6-8
An alternative to hamburger would be 2-3 cups of shredded cooked chicken breasts.
