Muffin tin/24 count
1-1/2 cups sugar
3 tablespoons vegetable oil
3 medium ripe bananas, mashed (about 1-1/4 cups)
3/4 cup orange juice
3 cups flour
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup chopped pecans or walnuts
Combine the sugar, oil and eggs into a bowl and mix well. Stir in bananas and orange juice.
Combine the dry ingredients; add to banana mixture, beating just until moistened. Stir in nuts. Pour into paper lined muffin tins.
Bake at 325 degrees for 17-20 minutes or until a toothpick inserted near center comes out clean. Cool for 5 minutes; remove from muffin tins to wire rack to cool completely.
This recipe can also be baked in two greased 8" x 4" loaf pans, baked at the same temperature for 50-60 minutes.
Please note the oven temperature is at 325 degrees, not 350.
